5 Ingredient Vegan Vanilla Coconut Ice Cream!

  • Coconut Cream
  • Vanilla Bean

2 14-ounce (414 ml) cans coconut cream* or full fat coconut milk

1/2 cup (100 g) organic cane sugar (sub up to half with agave nectar or maple syrup)

3 Tbsp (45 ml) melted coconut oil*

optional: pinch sea salt

1 vanilla bean pod, split and scraped (or 1/4 – 1/2 tsp vanilla powder)

2 tsp pure vanilla extract

Incredibly Simple, Perfectly Sweet, Insanely Creamy!

This ice cream just screams vanilla, infused with both vanilla bean and vanilla extract. Not only does this combination add more flavor, the extract (which typically contains alcohol) helps prevent ice crystals.The result is the perfect creamy, dreamy coconut ice cream.

Serves: 8 (1/2 cup servings)


  1. The day or night before, place your ice cream churning bowl in the freezer to properly chill (see notes if you don’t have an ice cream maker).
  2. The following day, add coconut milk, organic cane sugar, coconut oil, sea salt, scraped vanilla bean and vanilla extract to a high speed blender and blend on high until completely creamy and smooth for 1-2 minutes to fully dissolve the sugar.
  3. Add more cane sugar or agave if it needs more sweetness.
  4. Add mixture directly to chilled ice cream maker and churn according to manufacturer’s instructions – about 45 minutes. It should look like soft serve See notes if you don’t have a churner.
  5. Once churned, transfer the ice cream to a large freezer-safe container (such as a loaf pan) and use a spoon to smooth the top.
  6. Cover securely and freeze for at least 4-6 hours or until firm. Set out for 5-10 minutes before serving to soften – a hot ice cream scoop also eases scooping.
  7. Will keep in the freezer for up to 10 days, though best when fresh. Pairs perfectly with pies, cakes, cookies and more!


  • *I like Trader Joe’s Coconut Cream, but you can also use your favorite brand of full fa coconut milk. Coconut cream, however, will yield creamier results.
  • *If you don’t own an ice cream maker, you can add chilled mixture to a freezer-safe container and freeze.
  • Once every hour, remove from freezer and stir /whisk to incorporate air. Repeat until mostly firm – 6-8 hours.
  • Then continue freezing until completely firm before serving. It won’t yield as creamy results, but it should still work.
  • *Nutrition information is a rough estimate for one 1/2-cup serving of 8 total servings.
  • *Because some readers had trouble with the coconut oil separating when chilled, I’ve updated the recipe to be made in a blender instead of on the stovetop (April 9, 2016) for better results.
  • I also recently retested (August 9, 2016) to include the option to use coconut cream instead of coconut milk, and agave for up to half the cane sugar.

MIT scientist “half of all children will be autistic by 2025”

Senior researcher, Dr. Stephanie Seneff, from MIT suspects that glyphosate toxicity from the overuse of Monsanto’s pesticide Roundup on our food supply will result in half of the children population having autism by the year 2050. If you’re not aware of Monsanto and their dirty dealings by now, it’s time to catch up. Not only is the big-agricultural company responsible for putting small farmers out of business and selling sterile seeds, but its introduction of GMO franken-foods into the food chain (and over-use of chemical fertilizers, herbicides, and pesticides) is the number one suspect for the bee colony collapse. If that’s not enough, one senior researcher scientist at MIT suspects that glyphosate toxicity from the overuse of Monsanto’s pesticide Roundup on our food supply will result in half of the children population having autism by the year 2050. The past few years, however, her concentration has shifted to focus instead on the relationship between nutrition and health, specifically the topics of Alzheimer’s, autism, and cardiovascular diseases, and also the correlation between nutritional deficiencies and environmental toxins on human health. Early December, Seneff spoke out at a conference to a panel discussing GMOs, shocking audience members when she stated, “At today’s rate, by 2025, one in two children will be autistic.” Dr. Seneff noted that the side effects of autism closely mimic those of glyphosate toxicity, and presented data showing a remarkably consistent correlation between the use of Roundup on crops (as well as the creation of Roundup-ready GMO crop seeds) with the rising rates of autism. It seems children with autism have lower bio-markers indicative of excessive glyphosate, including zinc and iron deficiency, low serum sulfate, seizures, and mitochondrial disorders. The audience’s discomfort at Stephanie’s statings were obvious according to a fellow panelist. After the conference he reported, “All of the 70 or so people in attendance were squirming, likely because they now had serious misgivings about serving their kids, or themselves, anything with corn or soy, which are nearly all genetically modified and thus tainted with Roundup and its glyphosate.” In Seneff’s report to the panel, she was quick to note the prevalent use of glyphosate and its concerns. Because it is used in soy and corn, all soft drinks and candies sweetened with corn syrup and all chips and cereals that contain soy fillers have small amounts of glyphosate in them, as do beef and poultry since cattle and chicken are fed GMO corn or soy. Wheat, too, is often sprayed with Roundup just prior to being harvested, which means that all non-organic bread and wheat products would be sources of glyphosate toxicity. The amount of glyphosate in the previously listed foods may not be large, but the cumulative effect (especially since most Americans now consume 70% of their diet from processed sources) could be devastating. Many studies are now showing the dangerous link between human health and chemical fertilizers, genetically modified foods, and pesticides on the food supply. For example, a recent study shows that pregnant women living near farms where pesticides are applied have a 60% increased risk of children having an autism spectrum disorder. Furthermore, many other toxic substances may be autism-inducing. Alliance for Natural Health released a report revealing the government’s deliberate concealment of the link between the MMR vaccine (for measles, mumps, and rubella) and a sharply increased risk of autism – especially in African American boys. Other studies now show a link between a child’s exposure to pesticides and autism; for example, children whose mothers smoked were also twice as likely to have autism. Research also acknowledges that environmental contaminants such as PCBs, PBDEs, and mercury can alter brain neuron functioning even before a child is born. In addition, the number of adverse reactions from vaccines has been reported to be correlated with autism as well – though Dr. Seneff says its correlation does not match as closely as with Roundup. In conclusion, it seems quite obvious that the overuse of chemicals and other environmental toxins to the food supply is not only detrimental to the environment, but is wreaking have on mankind’s health. No doubt autism is a complex problem with many potential causes, but Dr. Seneff’s data is particularly important considering how close the interrelationship is. The fact that it is coming from a scientist with impeccable credentials also validates the demand to take it all more seriously. Earlier last year, Stephanie Seneff presented many of the same facts at the Autism One conference; that presentation is available on YouTube. This is not the first time Roundup has received criticism for its suspected danger(s). Because glyphosate in Roundup targets the shikimate pathway in bacteria, fungi, algae, parasites, and plants (inhibiting the biosynthesis of amino acids), it works as an extremely effective herbicide. Yet its manufacturers claim that the chemical concoction is harmless to other organisms (specifically us), as humans don’t have this shikimate pathway. But Dr. Seneff disagrees in their stating, claiming that gut bacteria in the human gut does have this pathway, and is crucial to retain because it helps supply the body with essential amino acids. If the beneficial bacteria is killed of by Roundup, pathogens may grow and interfere with the body’s ability to synthesize amino acids (including the amino acid methionine, which leads to shortages in critical neurotransmitters and folate), and chelate (remove) important minerals like iron, cobalt, and manganese. These are only some of adverse effects. What may be worse, the scientist states that additional chemicals in Roundup are untested because they’re classified as “inert”. Yet, according to a 2014 study in BioMed Research International, the untested chemicals are capable of amplifying the toxic effects of Roundup hundreds of times over. “In my opinion, the situation is almost beyond repair,” Dr. Seneff dimly shared after her presentation. “We need to do something drastic.” Something drastic could be as simple as opting out of consuming (or feeding one’s family) processed, highly refined sugary foods, and low-quality (factory-raised) animal products. It may even include learning how to grow one’s food in their own backyard, or start a co-op to share in the bounty of fresh, high-nutrient, and pesticide-free organic produce. For the health of present people and future generations to come, there is limited time to debate what action should be taken to prevent issues of affluence, as statistically they are already at an all time high. A senior scientist at MIT has declared that we are facing an epidemic of autism that may result in one half of all children being affected by autism in ten years. Dr. Stephanie Seneff, who made these remarks during a panel presentation in Groton, MA last week, specifically cites the Monsanto herbicide, Roundup, as the culprit for the escalating incidence of autism and other neurological disorders. Roundup, which was introduced in the 1970’s, contains the chemical glyphosate, which is the focal point for Seneff’s concerns. Roundup was originally restricted to use on weeds, as glyphosate kills plants. However, Roundup is now in regular use with crops. With the coming of GMO’s, plants such as soy and corn were bioengineered to tolerate glyphosate, and its use dramatically increased. From 2001 to 2007, glyphosate use doubled, reaching 180 to 185 million pounds in the U.S. alone in 2007. Wheat is now sprayed with Roundup right before it is harvested, making any consumption of non- organic wheat bread a sure source for the chemical. In addition, any products containing corn syrup, such as soft drinks, are also carrying a payload of glyphosate. According to studies cited by Seneff, glyphosate engages “gut bacteria” in a process known as the shikimate pathway. This enables the chemical to interfere with the biochemistry of bacteria in our GI tract, resulting in the depletion of essential amino acids . Monsanto has maintained that glyphosate is safe for human consumption, as humans do not have the shikimate pathway. Bacteria, however, does—including the flora that constitutes “gut bacteria.” It is this ability to affect gut bacteria that Seneff claims is the link which allows the chemical to get on board and wreak further damage. The connection between intestinal flora and neurological functioning is an ongoing topic of research. According to a number of studies, glyphosate depletes the amino acids tyrosine, tryptophan, and phenylalanine, which can then contribute to obesity, depression, autism, inflammatory bowel disease, Alzheimer’s and Parkinson’s. Monsanto disagrees. The food and chemical giant has constructed a webpage with links to scientific studies pronouncing the safety of glyphosate. Other science writers have also taken up the Monsanto banner, scoffing at the scientific studies that prompted Seneff to make her claims. “They made it up!” pronounced Huffpost science writer Tamar Haspel, in an article thin on analysis but heavy on declarative prose. Others, such as Skeptoid writer and PhD physicist Eric Hall, take a more measured approach, and instead focus on the studies which prompted the glyphosate concerns. According to Hall, Seneff is making an error known as the “correlation/causation error,” in which causality is inaccurately concluded when there exists only the fact that two separate items—in this case, the increased use of glyphosate and the increased incidence of autism—may be observed but are not, in fact, directly related. Seneff’s pronouncements focus specifically on the glyphosate issue. As we know, there are other potential tributaries which may be feeding the rise in autism and also causing age-related neurological conditions, such as Alzheimer’s. These may include contents of vaccines, aluminum cooking ware as well as other potential sources for chemical consumption. Some individuals, such as M.D. and radio host Rima Laibow have speculated on the intentionality behind this ostensible chemical siege against our gray matter. Laibow believes that the impetus may be to create an entire class of autistic individuals who will be suited only for certain types of work. This harks back, eerily, to Aldous Huxley’s classic Brave New World, in which individuals were preprogrammed from “conception” for eventual placement in one of five groups, designated as Alpha, Beta, and so on down to Epsilon, based on their programmed brain power. In Huxley’s dystopian world, this class delineation by intellectual ability enabled society to function more smoothly. Whatever may driving the autistic/Alzheimer’s diesel train, one thing is for certain: the spectre of half of our children coming into the world with significant brain damage constitutes a massive and undeniable wound to humanity. The rate of autism has skyrocketed from roughly one in every two thousand in the 1970’s to the current rate of one in every sixty eight. Alzheimer’s has become almost universal in the elderly. Rescuer Writes A Perfect Letter To The Jerk Who Abandoned This Dog

Every day, countless dogs are cruelly abandoned by their owners in the United States. But while this may be seen as an easy fix for people wanting to rid themselves of unwanted pets, for those animals they leave behind, nothing could be more devastating.

Fortunately, there are folks working tirelessly to save deserted dogs — folks like Brooke Rapozo, from Kings SPCA in California. After coming to the aid of one such animal, found this week dumped all alone at the end of a dirt road, she penned the perfect open letter on Facebook, aimed at the person responsible.
With Rapozo’s permission, we have reprinted the unedited letter in its entirety below.

Dear The Callous POS owner of this dog,

Today we noticed a couple of emails from people that had noticed your dog that had been abandoned on 15th ave and Excelsior ave. After looking at date, your dog had been sitting there since Saturday morning at least. It was 3:00 pm today when we finally noticed the messages because we have been so busy. We decided to drive over and see if we could help. Sure enough there he was.

He waited for you.

He hadn’t left the place you made him stay. He was being a good dog. He stayed close to the last place he saw his favorite person in the world. He thought you were coming back. He was watching every car that would come down the road hoping it was you coming back for him. Your dog has been freezing, hungry, and scared for days because you are a heartless piece of crap.

He waited for you.

He was so hungry that he was eating sticks. Nice people had stopped to drop off food but he was still so hungry and confused. But even with food sitting in front of him he knew he had to wait for you to come back.

He waited for you.

He isn’t a bad dog. He is a very good dog. You were a bad friend. You abandoned someone that would give his life for you. Someone who doesn’t care how long you stayed away at work. Someone who is just as happy to see you if u just go outside to check the mail or if you leave for days. Someone who would lick the tears off your cheeks and the leftover food from your plate when u were done eating.

He won’t be waiting for you anymore.

After he was seen for day curled up in a ball on the road you left him, we came back for him. We came back with a fellow rescuer named Yvonne from Raven’s Rescue BullyBreed Sanctuary. It was getting dark and we could hear the coyotes in the distance. We sat there for hours. We talked to him. We sat there singing to him. We fed him and offered him a banket.

Your dog ate from our hand after hours of throwing him wet food. Your dog finally came closer to us as we laid in the cold dirt telling him “everything is going to be ok and this is the last time anyone will hurt you”. Your dog finally let me pet the top of his head. Then behind his ears. Finally he didn’t run when I scooted over and sat next to him. He finally laid down and allowed me to give him belly rubs. He let me put a leash on him and didn’t try to run.

He didn’t panic until it was time to leave. He wanted to wait for you. He refused to walk to the van. I carried your huge dog to our van; your big, gentle, scared, and loyal dog. I carried your dog away from the last place he saw you. He howled the whole car ride to our shelter. He howled the most painful howl I have ever heard. It was the sound of his heart breaking. He desperately tried to get back to the spot that you left him. He frantically checked every window then watched out the back window as we drove away. His howls lasted until he came to the driver seat and howled at me. As I reached over to pet his head he looked at me so confused and laid his head on my lap and whined as we pulled up to the shelter.

You don’t deserve this amazing puppy. You don’t deserve any dog at all.

My dog will forget about you. He will find a good home and will get the love he deserves. He will know what it’s like to have a real home.

I don’t care who you are or your excuse as to why you abandoned my dog. It’s probably a BS reason anyways. You are a scum bag. I pray your year is filled with karma and bad health.
